The White Wolf Japanese Patisserie in Clawson, MI is a modern Neo-Japanese Patisserie and Cafe. Featuring an ever-changing selection of pastries, cakes, breads, cocktails, coffee and tea using locally sourced, organic and sustainably grown ingredients.
Opening in September 2019, the 2,646 SF bakery and cafe seats 40 at butcher block tables with leather chairs and a large high-top counter with a view of the kitchen.
The Challenges
The White Wolf was built in a space that had been neglected by lack of use and age. Creating a space that could house a professional kitchen to meet the demands of a world-class pastry chef while displaying the modern finishes designed by HF Architecture, was going to be a challenge.
Problems Solved
Snyder Construction was tasked with bringing the outdated utilities up to code and creating a space that would be clean and safe for food preparation, handling and enjoying. The final project speaks for itself, just two months after opening White Wolf was nominated as Bakery of the Year by Eater Detroit. Snyder’s construction team finished the project on schedule and within budget.
